Cabernet Sauvignon from Horse Heaven Hills in Walla Walla  is pure cabernet--very elegant and very complex. Normally, I do not like a pure cabernet, but the 2004 champoux is an exception!! The incredibly smooth, velvety feeling combined with rich berry fruits balanced beautifully with a long, spicy finish is the perfect accompaniment to my roast beef tenderloin.  --Henri P. It is very important to let you know when I will be out of the office.  From January 8th to17th, I will be in Hawaii as a guest lecturer at the 29th Plastic Surgery Symposium. I will remind you again of these dates, but it is nice to know now in case you need to set up an appointment with me some time soon.

Dear Friends, Colleagues and Patients:
Greetings!   Best wishes to you during
 this holiday season!  Earlier this month, I was in Bordeaux, France where I
was invited to appear as a guest lecturer at the Symposium de l'esthetique.
This port city on the Garonne River in southwest France is known all over the
world for its abundance of fine wine. Since the 8th century, Bordeaux wine
has been made in this region, and there are 287,000 acres of vineyards and
13,000 grape growers. With an annual production of approximately 850 million bottles-
that is truly amazing!

The recent cold spell was a reminder of how winter is here to stay, so it is a good time to think about taking care of your skin.  Have you ever wondered about the difference between skin care products sold in stores and the skin care products available in the doctor's office?   In this month's issue of Face Forward, we will give you the information you need to know about how to choose the right products that will provide lasting benefit and protection for your skin.

During the holiday season, I like to cook a special dish every night.  I find that the holiday foods, sights and sounds make this time of year memorable and a joyous celebration.  This month I am giving you my recipe for my Roast Beef Tenderloin.  Originally, I was going to recommend a Bordeaux wine from my recent visit to France,but I find that what I enjoy most are those wonderful Washington wines from our own  backyard.  So this month, we have a delicious Gamache Vintners 2004 GV Reserve
"Gamache - Champoux Vineyard Select" Cabernet Sauvignon from Horse Heaven Hills in Walla Walla. We also have some special skin care advice from our aesthetician Raihana  who explains the benefits of using a Clarisonic Brush on your skin!

                   Medical Grade Skin Care Products

Medical grade skin care products are composed of ingredients that have been medically proven and are only available through a doctor.  Many of these skin care products have been released to the market only after years of clinical research and their benefit has been proven. Some medical grade products may appear to be similar to those available in department stores, but their ingredients are at a much greater strength than the U.S. Food and Drug Administration allows in those skin care products that are sold over the counter. Here are some common features of medical-grade products.

Medical grade products:

·    Are available through a doctor.

·    Have been designed for deep penetration.

·    Work at the dermis or middle layer of the skin, where collagen and elastin are contained.

·    Work at the basal, or bottom layer of the skin,   
where new skin cells are produced.

·    Are designed to correct or heal a problem.

Henri's Roast Beef Tenderloin

 My roast beef tenderloin is the perfect holiday meal that can be served any night to celebrate the season. --HPG

Prep Time: 10 minutes
Cook Time: about 40 minutes
Makes four-to-six generous servings                 
1.       One 3-lb center-cut beef tenderloin
2.       1 Tbsp each chopped fresh rosemary
3.       2 Tbsp of finely chopped garlic
4.       2 Tbsp olive oil
5.       1 tsp each salt and freshly ground pepper
6.       Garnish: rosemary sprigs
7.       Henri's secret wine sauce (recipe follows)

1. Heat oven to 450°F. Use a large baking pan that can catch the meat's juices.
2. Baste beef with olive oil.  Mix rosemary, garlic, oil, salt and pepper in a cup; press on the roast. Then place  beef on the baking pan and insert a meat thermometer.
3. Roast 30 to 35 minutes until thermometer registers 145°F. Remove to cutting board, cover loosely with foil and let rest about 15 minutes (temperature will rise to 150°F for medium-rare).
4. While the tenderloin is roasting, it is time to make my secret wine sauce!
Secret Wine Sauce Ingredients:
2 Tbsp butter
8 oz sliced white button mushrooms
3/4 cup sweet sherry wine or port
1 tsp minced garlic
1 1/2 cups beef broth
2 Tbsp tomato paste
1 Tbsp of brown sugar
1 tsp chopped fresh thyme, salt & pepper to taste
Melt butter in large skillet. Add mushrooms; sauté over medium-high heat
4 minutes or until golden brown. Stir in sherry and garlic; boil 2 minutes. Add to skillet
with remaining ingredients. Bring to a boil and keep stirring, 1 minute or until thickened
and glossy. Pour into gravy boat and serve with the beef.
5. To serve: Slice and arrange on a serving platter; spoon on a little of my secret wine sauce. Garnish with fresh rosemary sprigs and enjoy!

You can serve this wonderful tenderloin with any sort of potato. Sometimes I love to serve the tenderloin with simple baked potatoes and sour cream but my favorite way is to serve fresh potato gnocchi in a simple white sauce together with a side dish of fresh steamed kale or fresh seasonal greens sautéed with garlic in olive oil. This dish is really set off by my favorite Cabernet from Walla Walla.  Happy Holidays! -Henri P. Gaboriau M.D., FACS

Originally from France, Dr. Henri P. Gaboriau obtained his first medical degree at the School of Medicine in Paris. He then transferred to Tulane University School of Medicine in New Orleans, La., where he received his second medical degree in 1994. He stayed at Tulane Medical Center to do his residency in the field of Otolaryngology/Head and Neck Surgery. Following his residency, Dr. Gaboriau moved to Seattle to do a Fellowship in Facial Plastic and Reconstructive Surgery at the University of Washington.  In 2000, he opened the Sammamish Center for Facial Plastic and Reconstructive Surgery and is currently the director of this facility.
